Paolo Brunelli

Owner of the renowned Gelateria Cioccolateria Paolo Brunelli in Senigallia, he is one of the foremost interpreters of signature gelato in Italy, honored with the prestigious title of Master of Arts and Crafts (MAM) in 2020. Approaching the sector with deep respect, he trained alongside the greatest masters before establishing his historic shops in Ancona and Senigallia.

Artistic director of the Festival del Gelato Artigianale of Agugliano since 2009, he distinguishes himself through a creative and multi-faceted spirit that has earned him, from 2017 continuously through the following years, the peak Three Cones rating in Gambero Rosso’s Gelaterie d’Italia guide.

At ALMA, he places his extraordinary production philosophy—balanced between technical rigor, contemporary innovation, and respect for raw materials—at the service of training future pastry and gelato professionals.
