The Evolution of ALMA

We were born just over twenty years ago with the goal of training conscious and responsible professionals, ready to enter the workforce with an excellent cultural and technical background and a deep value system.

We started as a culinary school, with a first course of 17 students: today we embrace all hospitality professions, from front-of-house to management, and we host over 1,000 students a year from all over the world.

Over the years, we have shaped our educational approach to the needs of the restaurant industry, with a training offer solidly rooted in the knowledge of tradition but capable of facing the new challenges of the modern era.

Furthermore, alongside this educational mission, we have always maintained a constant commitment to promoting Italy's agri-food heritage, in order to safeguard, protect, and disseminate our country's authentic products worldwide.

The Origins

ALMA was founded in 2004 inside the Reggia di Colorno, to provide an answer to all those seeking superior technical training in the culinary arts, capable of combining laboratory practice with theoretical study.

The Mark of Gualtiero Marchesi

"Father of Italian Cuisine," Marchesi led the School as Rector for fourteen years until 2017, giving the education the form and substance that made it an excellence worldwide. After him, great professionals took up his legacy at the helm of the School: a Steering Committee composed of professionals and experts from various sectors of Hospitality now traces the path within which our teaching operates every day, balancing respect for the past and a vision for the future.

A School for All Hospitality

Over the years, ALMA’s educational offering has extended to all fields of Hospitality; alongside professionalizing courses dedicated to those who have yet to embark on their career path, we have added refresher courses for those who are already working and wish to expand their skills. Furthermore, we have taken our training across borders, creating a network of partner schools in over 20 countries, welcoming students from all over the world, and opening a campus in Bangkok, Thailand.

We feel a duty to protect Italian gastronomic culture. We do this by giving students the tools to interpret it in a modern way, while respecting its roots. We train professionals who know how to keep up with the times while maintaining a solid bond with tradition.

Attending ALMA means investing time and energy; it means making a life choice. For this reason, we feel responsible for the outcome: training individuals who are updated on the real needs of the industry, offering selected and valuable internships, and guaranteeing continuous support for entering the workforce.

The Code of Ethics

ALMA operates according to the principles of integrity, fairness, and confidentiality. For this reason, it decided to adopt a Code of Ethics to manifest its commitment to the execution of all activities present in its charter. The document describes the principles of fairness, loyalty, integrity, and transparency in behavior, operating methods, and the ways relationships are conducted both internally and toward third parties.

The Code of Ethics aims to create the prerequisites for respectful and socially responsible behavior, and to build relationships of trust between ALMA and its employees, collaborators, and students.
