Organised Visits: stepping into the heart of the profession
Crossing the threshold of a restaurant or a renowned culinary establishment means understanding its rhythm, organisation, discipline, and unique appeal. ALMA welcomes schools — by reservation and free of charge — to offer students a direct immersion into its educational environment.
If you wish to go beyond a simple tour of our classrooms and laboratories, your school can combine the visit with a day of advanced training: technical sessions and in-depth workshops led by ALMA instructors, specifically tailored to the chosen study area (Cuisine, Pastry, Dining Room Service, or Baking). This customised experience requires advance booking and payment of a participation fee.
Experiencing first-hand the spaces where future fine dining professionals are trained will allow students to gain a deeper understanding of the educational method and the discipline required to excel in the industry.

Note for teachers: If a class visit is not planned, Open Days are an excellent individual alternative. These dedicated events focus on specific programmes and are open to prospective students and their families. They are ideal to recommend to highly motivated students who wish to explore their future independently.
Summer School: a first step
Imagine a week entirely dedicated to refining your skills, understanding the dynamics of an outstanding culinary team, and immersing yourself in gastronomic culture in the heart of Italy’s Food Valley. ALMA’s Summer School is an exclusive educational experience designed for graduates of hospitality schools (Cuisine and Dining Room Service programmes) who have distinguished themselves through achievement and dedication during their studies.
An introductory course to the ALMA method that combines theoretical lessons on the history of Italian Cuisine, technical masterclasses with ALMA instructors and industry experts, and educational visits throughout the Parma area and its surroundings to discover first-hand the origins of the great PDO and PGI products.
The course takes place every year during the summer period (generally by the first week of August), from Monday to Friday.
The program is reserved for only 20 culinary students and 20 dining room service students selected at national level. Admission is granted through a recommendation from their own institution based on exceptional academic achievements, or as winners of culinary competitions promoted by ALMA.
ALMA Orientation to the Restaurant Industry
Three days to redefine the boundaries of students’ professional ambitions. The O.R.A. project is a limited-enrollment program developed exclusively for Italian public hospitality schools, created to guide students in choosing their next steps after graduation, based on their dreams and their actual potential.
