The recognition of Italian Cuisine as a UNESCO Intangible Cultural Heritage of Humanity does not simply celebrate a series of recipes, but a way of living, sharing, and passing down knowledge that is unique in the world. At ALMA, we feel the responsibility of being the guarantors of this immense value, transforming a millenary tradition into a profession of excellence.

ALMA’s mission is to take this heritage—which roots itself in collective memory and in "grandmothers' kitchens"—and noble it through technical rigor and cultural awareness.

Our teaching protects original techniques and the typical nature of local products, ensuring that Italian craftsmanship (saper fare) is transmitted in its most authentic form.
