Philosophy and Education

ALMA’s educational model is based on a fundamental principle: providing students with the critical tools to understand the product, respect tradition, and navigate innovation with competence.

Pedagogical Thought: Learning the "Why"

At ALMA, we do not limit ourselves to passing down procedures. Our educational system is structured to develop autonomous thinking in our students. We train professionals who know how to do things, but above all, why to act in a certain way. This approach translates into three main pillars:

Respect

Respect for the Raw Material

Deep knowledge of seasonality and biodiversity
Mastery

Technical Mastery

The study of the gesture and technology as the baseline for creative freedom
Ethics

Service Ethics

The awareness that every gastronomic act is an act of responsibility toward the guest and the territory

Preparation for the Real Market

The School's philosophy takes concrete form in a pathway that leads the student from the laboratory inside the Ducal Palace of Colorno to the most prestigious brigades. We believe that true training achieves excellence by integrating masterclasses, simulated exam trials, and the crucial internship phase, guaranteeing a solid preparation that is immediately employable within the international hospitality sector.

Il Comitato di Indirizzo

The Advisory Committee: Our Strategic Guide

To guarantee that our training is always aligned with market evolutions, ALMA relies on an Advisory Committee (Comitato di Indirizzo). This is not a mere representative body, but a working group composed of the main leading figures of Italian Hospitality and Culture.

Their task is to monitor sector trends and guide the School's educational choices, ensuring that our programs remain updated, practical, and responsive to the real needs of businesses.

The Voices of Excellence at the Service of Education

The Committee brings together experts in every key area of our teaching. Thanks to their contribution, every course benefits from an overview that blends practice with strategy:

  • Cuisine: Massimo Bottura
  • Pastry: Andrea Tortora
  • Front-of-House (Sala): Mariella Organi
  • Communication, History, and Culture: Davide Rampello
  • Gastronomic Physics: Davide Cassi
  • Baking / Bread-making: Davide Longoni

Alongside them, Andrea Grignaffini, food and wine critic and journalist, serves as the spokesperson and liaison between the Advisory Committee and the Board of Directors of ALMA.
