Course Informations

Objectives

You will begin an immersive journey through authentic flavors and centuries-old traditions. In this course, you will learn to master the basics of Mediterranean cuisine, interpreting them with a contemporary and refined vision. We will guide you through a continuous sensory discovery: you will acquire the necessary technique to process the raw materials of excellence that define Made in Italy. You will leave ALMA with absolute mastery of regional classics, ready to bring Italian quality to the best kitchens on the planet.

Course Structure

UNIT 1

The Italian Culinary Program UNIT 1 starts from the basics. Dedicated to all food enthusiasts without formal experience in the sector, UNIT 1 focuses on mastering techniques and learning to recognize the true flavor of Italian cuisine. It is a prerequisite for UNIT 2.

Our instructors will guide you through the Food Valley and other regions of Italy, visiting places and introducing traditions that form the basis of Italian food excellence.

Between theoretical culinary lessons and practical sessions, the program is designed to acquire foundational knowledge and primary skills. The lessons also include educational field trips, enology lessons, and the history of cuisine.

Attendance and Duration

 3/4 days per week, 6-8 hours per day.

  • A first phase of 2 months in the classroom.
  • An internship phase of 1.5 months (the internship is included only for candidates who enroll in the complete Unit 1 + Unit 2 program, and it can be optional. For candidates attending Unit 1 only, the internship is not included).
Maximum 18 students per edition.


Certification

Attendance Certificate “Fundamentals of Italian Cuisine – Products & Techniques” issued by ALMA and the Certificate for Competence Units 1 and 2 of the Catering Operator qualification* issued by the Emilia-Romagna Region.


*Only for students enrolled in the complete Italian Culinary Program Unit I and Unit II who have completed the internship at the end of Unit I.

UNIT2

Step up to an advanced level to become a true professional. Live a complete experience of Italian food and wine culture.

You will apply the techniques acquired in UNIT 1, mastering traditional recipes and meeting professionals and big names in the restaurant industry.Italian history and culture, knowledge of Italian wines, and the Italian language are some of the subjects you will tackle in this path of excellence. You will discover and taste regional products by visiting local producers during educational field trips.

At the end, a mandatory internship will take you into the most renowned restaurants in Italy to enter a real kitchen in a professional manner.

Attendance and Duration

3/4 days per week, 6-8 hours per day.

A first phase of 4 months in the classroom.

An internship phase of 4 months (mandatory).

Final examination lasting 2 days.

Maximum 18 students per edition.

Certification

Professional Diploma “Professional of Italian Cuisine – Advanced Level” and the Qualification Certificate of Meal Production Technician.
